Sweet Cornbread Muffins

When I can't sleep at night I watch people cooking on YouTube.  And have found a lot of good recipes, some I've made and others kept for kitchen inspiration.

 

These muffins from Mansa Queen have become one of my favorites.  They go great with morning coffee.  Or can be a light afternoon pick-me-up snack.

This recipe makes 12 large cupcake size, or 20-24 regular size cupcakes.

Muffins

2       boxes Jiffy Cornbread Mix

4       T. sugar

3       eggs

1-1/4  C. buttermilk

7       T. melted butter

​

Glaze

2       T. melted butter

4       T. honey

​

​

Stir together the cornbread mix and sugar and set aside.

Whisk the eggs, add buttermilk and melted butter.

Pour into the dry mix and stir til smooth.

​

Melt more butter and brush all over the inside of the cupcake wells. 

Fill the wells only 1/2 to 2/3 full. 

​

Bake at 350 degrees for 20-25 minutes.

​

While cakes are still hot brush their tops with the glaze once or twice letting it sink down into the muffin.

​

This is as close to Muffin Heaven as you'll ever get!
