Red Chicken

This is another recipe that will serve lots of your friends or relatives or will give you several meals in the freezer ready to go when you don't feel like cooking.

 

I came up with this when my three sisters were visiting on one of our annual Women's Weekends.  We usually spent our day talking, reading, doing our nails, or sometimes playing cards. 

 

So our lazy afternoon needed something to slow simmer in the Dutch oven without any work, and enough for my daughter and her boys, 12 and 53, who were coming for a supper visit with the aunts.

About 12 chicken pieces, a mix of breasts, thighs, and drumsticks

​

1 jar Bertolli Rustic Cut Pasta Sauce With Hearty Vegetables

1/2 jar Bertolli Marinara Sauce With Sausage

One shake my own mix of six spices (click here for list)

Put all chicken pieces in the pot and simply pour the sauces over, lifting and making sure all pieces are covered in red sauce.  Then give a light shake of the spice mix, not enough to taste like curry.  

​

Leave to simmer on medium heat, checking every once in a while to make sure everything is cooking well, rearranging the chicken a little.

 

This will take a couple hours on a slow simmer til done.  (Play cards.)

We ate this with pre-packaged mashed potatoes covered with the

red sauce, broccoli salad from the Deli, and crunchy rolls. 

 

So simple to do, a no-work guest supper absolutely delicious!

It was so good our picky boys even asked for seconds!
