Christmas Casserole Cookie

This recipe is fun for kids to make because it is so messy! 

 

When I lived alone with my two children I used to put a vinyl cloth on the kitchen table and let them roll up these rich cookies.  Rich enough that the finished sugar coated balls could be called candy.  

 

My stained recipe card brings back memories of laughter and two little kids whose sticky kisses and hugs I miss.

2  eggs                    1 cup sugar

1  cup chopped dates     1 cup coconut

1  t. vanilla               1/4 t. almond extract

1  cup chopped walnuts

Beat the eggs, add sugar and beat well.

​

Blend in remaining ingredients til all mixed together.

 

Turn into a two quart casserole dish.

​

Bake at 350 degrees for 30 minutes.  

​

Remove from oven and beat with a wooden spoon.  

​

Cool the hot mixture and roll into sticky little balls.

 

Roll balls in granulated sugar for a finished look, and chill. 

 

(All this rolling around was the kid messy fun part.)
